Almond Protein Pancakes

Makes 1 serving

Macros: 335 cal, Fat 16g, Carbs 29g, Protein 21g, Fibre 4g


1/4 cup almond flour

2 tbsp vanilla protein powder

1 egg or egg substitute

1.5 tsp coconut oil

2 tbsp unsweetened vanilla almond milk

1 tsp raw honey

1 cup blueberries (for garnish on top)


Whisk almond flour, almond milk, eggs & honey together in a bowl until batter is smooth. Heat oil in a skillet over medium heat; drop batter by large spoonful & cook until bubbles form and the edges are dry (3-5 mins). Flip & cook until browned on the other side (3-5 minutes). Garnish with blueberries and enjoy.
