Blueberry Chia Muffins

Ingredients:
66G Vanilla Whey Protein Powder
28G Coconut Flour
12G Chia seeds
5G Cinnamon
1/4 tsp Baking Powder
18G Light Butter
60G Unsweet applesauce
1 Egg
65G Blueberries
Stevia to taste
Directions:
Preheat oven to 350 degrees. Melt butter slightly so that it is warm, but not hot ( OVEN TO 350 DEGREES. (YOU DON’T WANT IT TO ACCIDENTALLY COOK THE EGG!) Mix all the ingredients together and add just a little water, until a muffin batter consistency is reached. Spray muffin tin with oil and fill 6 cups about 3/4 full. Sprinkle a dash of stevia and cinnamon on top of each muffin. Bake for 10-15 minutes, checking with a toothpick for doneness. Enjoy!
