Bruschetta Chicken + Roasted Broccoli

Makes 3 servings

Macros for Chicken: 232 cal, fat 8g, carbs 10g, protein 29g, fibre 2g

Ingredients

15 oz chicken breast (measured raw)

1.5 tbsp extra virgin olive oil

Sea salt & black pepper (to taste)

3 medium tomatoes, diced

1 small red onion, finely diced

1 tbsp minced garlic

1 tbsp dried basil

1 tbsp balsamic vinegar

4 cups broccoli, cut into florets

Directions: Preheat oven to 450 degrees. Pound the chicken breasts gently so that

they are all of even thickness. Brush both sides of the chicken with olive oil &

season with salt and pepper. Place the chicken into a glass baking pan. Place

broccoli on a rimmed baking sheet. Bake both the chicken and broccoli for 15-20

minutes. In the meantime, combine the tomatoes, red onion, garlic, basil, olive oil

and balsamic vinegar in a bowl. When chicken is done, remove from oven and top

with tomato mixture then enjoy.
