- Non-stick cooking spray
- 3 x 4 oz boneless, skinless chicken breast
1/2 cup seasoned whole wheat bread crumbs
- 3 tbsp grated parmesan cheese or vegan cheese
- 2 tsp melted unsalted butter or vegan butter
- 1 tbsp olive oil
- 2 cups marinara sauce (any kind)
- 9 tbsp part-skim mozzarella cheese or vegan cheese
DIRECTIONS FOR CHICKEN PARMESAN:
Preheat oven to 450F degrees. Lightly spray a large baking sheet with
non-stick cooking spray.
In a shallow bowl, combine the bread crumbs and parmesan. In another small
bowl, combine the butter and olive oil. Brush the butter and oil on both sides of the
chicken, dredge the chicken in the bread crumb mixture and then put the chicken
on the prepared baking sheet. Bake until golden on the bottom, about 20 minutes.
Turn the chicken over and bake until the centre is cooked through and the bottom
is golden, 5-6 minutes.
Meanwhile, in a large deep covered skillet, cook the marinara sauce over medium
heat for 2-3 minutes. Place the baked chicken in the skillet and top each piece with
1.5 tbsp of mozzarella. Cover the pan and cook until the cheese melts, 3-4 minutes.
