Ingredients:
5 cup (1" cubes), Pumpkin, raw
1 tsp(s), Spices, nutmeg, ground
1 large onion, Raw Large Onion
3 clove, Garlic Clove, Smashed
4 cups water or vegetable stock
Sea salt to taste
Directions:
In large pot heat ¼ cup water, add sliced onion and sliced garlic. Simmer 2 mins. Cut pumpkin down into small chunks. Add to pot with nutmeg and sea salt. Add vegetable stock or water, enough to cover the pumpkin. Bring to a boil and cook until pumpkin is tender. Blend ingredients with hand blender or transfer to blender. Blend until smooth.
