Easy Slow Cooker Pulled Chicken with Rice

Makes 3 servings

Macros: 387 cal, fat 6g, carbs 48g, protein 42g, fibre 7g


3 x 4 oz chicken breast

• 1 small white onion, chopped

• 1 x 28oz can of crushed tomatoes

• 1 tbsp cumin

• 2 tsp chilli powder

• 1 tsp cayenne

• 2 tsp garlic powder

• 1 tsp onion powder

• Juice 1 lime


Brown minute rice (enough for 3 servings of 3/4 cup cooked)

Directions: Place the chopped onions in the bottom of a Crockpot and add in

the chicken. Pour the lime juice and crushed tomatoes on top. Add all the

seasonings, and mix everything to combine. Cook on low for 6 hours. While

cooking, prepare brown minute rice (enough for 3 servings of 3/4 cup cooked).

Once cooked, take two forks to shred the chicken breast and mix well.

Serve over brown rice (3/4 cup cooked per serving)
