Garlicky Shrimp Stirfry

Makes 3 servings

Macros: 258cal, fats 15g, carbs 6g, protein 15g, fibre 3g

Ingredients:

1 lb Raw large frozen shrimp thawed, peeled, and deveined

1 bag cauliflower rice (frozen)

1/4 cup salted or vegan butter, melted

1/2 tbsp minced garlic

1 tsp dried parsley

1/4 tsp fresh ground black pepper

Directions:

Pre-heat oven to 400F.

Prepare cauliflower rice in the microwave following the instructions on the package. In a large bowl, add thawed and cleaned shrimp, butter, garlic, parsley, and black pepper. Mix to combine. Add the riced cauliflower to the bowl and mix to combine. Pour the shrimp and cauliflower mixture onto a sheet pan, making sure the shrimp are in a single layer. Bake in the oven for 15 minutes.
