GREEK CHICKPEA SALAD

Ingredients:  

2 GARLIC CLOVES, MINCED

1 TBSP OLIVE OIL

3 TBSP FRESH LEMON JUICE

1/2 TEASPOON SALT

1 CAN CHICKPEAS, RINSED AND DRAINED

1/4 CUP CHOPPED RED ONION

1 CUP CHERRY TOMATOES

1 ORANGE BELL PEPPER, CHOPPED

1/2 TSP DRIED OREGANO

1 CUCUMBER, CHOPPED

1/3 CUP REDUCED FAT CRUMBLED FETA CHEESE (OPTIONAL)

1/4 CUP KSLAMATA OLIVES, PITTED AND CHOPPED (OPTIONAL) 

Directions:

IN A LARGE BOWL, COMBINE THE GARLIC, OLIVE OIL, LEMON JUICE AND SALT. ADD THE CHICKPEAS, RED ONION, TOMATOES, BELL PEPPER, OREGANO, CUCUMBER, FETA CHEESE, OLIVES, AND TOSS WELL. DIVIDE INTO 4 EQUAL PORTIONS.
