Honey Glazed Chicken Skewers with Greek Lentil Salad

Makes 4 servings Macros: 615 cal, fats 14g, carbs 47g, protein 72g, fibre 8g

Ingredients: Chicken Skewers: 3 pounds boneless, skinless, chicken thighs, cut into 1inch cubes 1/4 cup honey 1/4 cup soy sauce 1/4 cup pineapple juice 1 tbsp minced garlic 1/4 teaspoon pepper 1/2 teaspoon salt Skewers Lentil Salad: 1.5 cups cooked lentils 1 medium cucumber finely chopped 1/2 10 oz container grape tomatoes chopped 1/4 cup chopped red onion 1/2 red bell pepper, chopped 1/2 yellow bell pepper, chopped 3 oz fat free feta cheese 1/4 can artichoke hearts (in water!) 1/2 tablespoon olive oil 1/2 tablespoon dried basil Salt and Pepper Directions: Chicken Skewers: Place chicken in ziplock bag with all remaining ingredients. Let the chicken marinade at least 2 hours.You may want to set aside a little extra marinade for glazing later, or you can always make more.Pre soak skewers in water (so they don't catch fire on the grill!) and thread skewers with chicken.Throw on greased BBQ (we rubbed ours down with olive oil on a paper towel) for about 5-8 minutes on each side.The last few minutes of cook time brush the skewers with any remaining glaze.
