Kale Avocado Salad

Makes 4 servings

Macros: 141 cal, fats 12g, carbs 8g, protein 2g, fibre 4g

Ingredients:

6 large handfuls of curly kale, washed and de-stemmed

1 avocado, diced

2 tbsp EVOO

1 tsp sea salt, (more for taste if needed)

1 tomatoes, diced

2 green scallion onions, finely chopped.

Juice of 1/2 Lemon

Directions:

PREP: chop kale into fine pieces. Add 2 tbsp EVO oil and massage into the kale until kale becomes wilted, soft and glistening. If you need more oil, add accordingly. This process takes the most time to soften the kale leaves and bring out the kales' natural oils.

Add avocado pieces and massage again so that kale is coated.

Chop the tomato into small pieces and add to the kale.

Add the finely chopped green onions.

Toss with your hands and squeeze the lemon juice over everything.
