Karri-Anne's Easy Chocolate Topped Granola Bars - GF, school safe

Makes 12 bars

Macros: 159 Cal, Fat 7g, Carbs 24g, Fibre 1g, Protein 1g


Ingredients

1/4 cup honey

1/4 cup butter

1/3 cup brown sugar

2 cups rolled oats

1 cup rice krispies cereal

1/2 tsp vanilla

1/2 cup semi-sweet chocolate chips


Directions:

Lightly grease 8x8 pan. Then put parchment paper in the pan, lightly greasing it helps the parchment paper to stick.

In a large bowl, combine oats and krispies, mix and set aside.

In a small pot, melt butter, brown sugar and honey over medium-high heat until comes to a boil.

Reduce heat and cook roughly 2 minutes - do not overcook or it will burn, just enough to dissolve sugar and boil.

Remove from heat and add vanilla.

Pour sugar mixture over cereal and mix well. Ensure all cereal is evenly coated.

Pour mixture into prepared pan and press down.

Melt chocolate chips and spread evenly over the bars.

Let cool in freezer about 5 minutes.

Cut into narrow bars and wrap in plastic. Store in refrigerator or freezer.

Sometimes I cut back on the sugar and add raisins or cranberries instead. Just to mix it up.

You could also add seeds or protein powder to boost the protein content. Enjoy.
