Low Carb Chicken Carbonara

MAKES 1 SERVINGS

Macros: PER SERVING: 354 CALORIES 51g Protein/14g Fat/7g Carbs/2g FIBRE

Ingredients:

200G ZUCCHINI NOODLES (SPIRAZLIED ZUCCHINI)

60G EGG WHITES

15G HEAVY WHIPPING CREAM

5G PARMESAN CHEESE

120G GRILLED CHICKEN

2 SLICES CENTER CUT BACON

1/4 TSP GARLIC

SALT – PEPPER TO TASTE 

Directions:

COOK ZUCCHINI NOODLES WITH GARLIC SALT AND PEPPER OVER MEDIUM HEAT ON STOVETOP UNTIL DESIRED TENDERNESS. BRING TO LOW HEAT. IN A BOWL, WHISK TOGETHER EGG WHITES AND HEAVY WHIPPING CREAM. COOK BACON SEPARATELY (MICROWAVE OR STOVETOP) SLOWLY STIR IN EGG WHITE/CREAM MIXTURE INTO ZUCCHINI NOODLES. STIR CONSTANTLY. WHILE EGG WHITE/CREAM IS COOKING, ADD GRILLED CHICKEN AND BACON. ADD 5G PARMESAN CHEESE ON TOP AND ENJOY!
