Peanut Butter Protein Balls


Makes 7 x 1" balls

Macros: 101kcal, Fat 6g, Carbs 9g, Protein 3g, Fibre 2g

Ingredients:

4 tbsp natural peanut butter

1 tbsp honey

1/2 tsp vanilla extract

7 tbsp rolled oats (use gluten-free oats, if needed)

2 tbsp unsweetened shredded coconut

pinch of salt

2 tbsp mini chocolate chips (use vegan/dairy free chocolate chips, if needed)

1-2 teaspoons water (as needed)

Directions:

In a medium mixing bowl, stir together the peanut butter, honey and vanilla extract. Stir in the oats, coconut and salt until well combined and then add the chocolate chips. If the mixture doesn’t hold together well when pinched together, add the additional water, a teaspoon at a time until the mixture holds together well when pinched. Form 1” balls by pressing about 1 tablespoon of the mixture together. Store at room temperature for up to 3 days or refrigerator for up to 1 week.
