MAKES 2 SERVINGS of 2 tortillas each

Ingredients:
1 medium onion
1 red bell pepper
2 tsp olive oil
salt + fresh pepper
For the Shrimp
3/4 lb shrimp, cleaned and deveined
1 tsp olive oil
1 tbsp minced garlic
salt + fresh pepper
pinch of chili powder
1 lime
Directions:
4 small whole wheat tortillas - my favourite is La Tortilla Factory Whole Wheat Low Carb
In a skillet, combine onions, peppers, 2 teaspoons oil, salt and pepper. Toss well to coat, continue to stir until onions are caramelized, about 20 minutes. Meanwhile, season shrimp with chili powder, salt and pepper.While the onions are cooking, heat a large frying pan on high heat. Add oil.When the oil is hot add the shrimp and cook for about 2-3 minutes on each side until cooked through. Remove from heat. Add juice from the lime. Toss well. Combine with the cooked onions and peppers and serve with tortillas.
