Makes 6 Servings
Macros: 447 Cal, Fat 11g, Carbs 61g, Fibre 4, Protein 25g
1 Tbsp olive/vegetable oil
1 onion chopped
1 clove garlic, chopped
1 rib of celery, chopped
1 small red pepper, chopped
1/2 tsp oregano
salt and pepper to taste
1 lb (454g) lean ground turkey
1 1/2 cups or 375mL canned crushed tomatoes
1 tsp chili powder
6 Kaiser buns
Heat oil in large pan over medium heat. Add onion and garlic and cook for 3 minutes or until onion softens. Add celery and red pepper and cook for another 3 minutes. Stir in oregano, salt and pepper.
Add ground turkey and stir for 7-10 minutes or until meat is browned.
Stir in crushed tomatoes and chili powder. Simmer for 5-10 minutes until thickened.
Toast buns. Scoop a big spoonful of filling onto the bottom of each bun. Top with the other half of the bun. (or choose to have 1/2 a bun with no bun topping or 1 bun as 2 bottoms) Serve with plenty of napkins!
