Sweet and Salty Trail Mix
Makes 8 servings
Macros: 275 cal, fat 18g, carbs 26g, protein 3g, fibre 2g
4 cups plantain chips
1 cup raw whole cashews
1 cup dried apricots
1 Tbsp ghee
1 Tbsp Taco Seasoning
Preheat oven to 350
Melt ghee in small skillet over medium-high heat, or microwave 30 seconds
spread plantain chips, cashews, dried apricots on a rimmed backing sheet
Drizzle melted ghee on top & toss (with your hands or wooden spoon) so that everything is coated with ghee.
Sprinkle Taco Seasoning evenly over the top
Bake for 15 minutes, cool & Enjoy!
