Zucchini Pasta with Sundried Tomatoes

Makes 2 servings

Macros: 217 cal, fat 6g carbs 10g, protein 30g, fibre 3g

• 2 zucchini, shredded/spiralized (can be made ahead and refrigerated)

• 1⁄4 cup sun dried tomatoes, chopped

• 1 tbsp pesto

• 225g 99% lean ground turkey


Directions: With a spiralizer, mandolin, or peeler – cut the zucchini into long noodle

shaped pieces and set aside. Pat dry with a paper towel to soak up the water.

Brown ground turkey over medium heat in a pan. Place all ingredients in a bowl.

Toss and enjoy.
