Avocado Pasta Salad

Makes 2 Servings

Macros: 291 cal, fat 16g, carbs 36g, protein 4g, fibre 8g

Ingredients:

0.50 cup dry pasta (55g), Gluten Free Penne Pasta

0.50 cup, Cucumber

0.50 cup, Cherry tomatoes

3 tbsp, Lime juice - Raw

2 tsp(s), Extra Virgin Olive Oil

0.25 tsp, Sea Salt

0.25 tsp, Spices, pepper, ground

0.12 tsp, Spices, paprika

1 medium, Avocado

Directions:

Cook Pasta according to directions on the box. While pasta is cooking, cut up vegetables. Place the avocado, salt, pepper, EVOO and lime juice in a blender. Once pasta is cook, drain and rinse, add the veggies and toss in dressing. Add paprika to the top and enjoy with a serving of protein of choice.
