Chickpea Salad

Makes 2 servings

Macros: 443cal, fat 11g, carbs 63g, protein 27g, fibre 17g

Ingredients: 1/4 cup finely diced onion 1 (15.5 oz) can chickpeas, rinsed & drained 1 red bell pepper, diced 1 seedless cucumber, chopped 1/4 cup feta cheese or dairy free cheese, crumbled (optional) DRESSING 1 tablespoons extra-virgin olive oil 1 tablespoons red wine vinegar 1 tsp minced garlic Dash pepper Dash salt Directions: Combine all dressing ingredients and mix well. Place all of the other ingredients in bowl, drizzle dressing on top and divide into 2 equal portions.
