Quinoa Protein Balls

Makes 20 servings

Macros: 152 cal, Fat 6g, Carbs 22g, Protein 4g, Fibre 2g

Ingredients:

1 cup (170g), Quinoa, Uncooked

2 cup, Rolled Oats

0.50 cup, Maple Syrup

2 tsp, Cinnamon

0.50 tsp, Salt

0.50 cup(s), Almond Butter

0.50 cup(s), Mini Chocolate Chips

2 tsp(s), Vanilla extract

Directions:

Rinse Quinoa. Cook Quinoa 1:2 ratio of water - and simmer until tender and water is gone. When cooked, let drain and cool in fridge. Once quinoa is cooled, mix all ingredients in a large bowl until well combined. With hands, roll into small bite-sized balls. Place on a tray and place the tray in the freezer for 1 hour, then transfer to fridge. If short on time, press mix into a container lined with parchment paper, and when hard cut into bite-sized squares.
