Ingredients:
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 green bell pepper, chopped
1 medium onion, chopped
1 cup fresh store-bought salsa
1 tbsp minced garlic
juice of 1 lime
4 cups low-sodium chicken broth
1 1/2 pound boneless skinless chicken thighs
1 teaspoon olive oil
1 Tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon sea salt
1 teaspoon ground pepper
Directions:
Put all ingredients into a slow cooker.
Cook for 3-4 hours on high or 6 hours on low. The chicken should be cooked through
and will just fall apart. Once this happens turn the slow cooker to warm and enjoy
